Recipe - Winter Vegetable and Lentil Soup
A warming winter meal for all the family. You don't need to stretch your culinary skills, break the bank or spend hours cooking if you choose to make soup. Your family will eat healthily and deliciously because soup is infinitely versatile and can be adapted to individual tastes.
Makes 6 - 8 servings
Suitable for freezing
- 8oz red lentils - rinsed under cold running water
- 2 medium onions - finely chopped
- 2 sticks of celery - finely chopped
- 6 medium carrots
- 1 small turnip
- 6 medium potatoes
- 1 medium sliced leek
- 1 tsp mixed herbs
- 4 pints of vegetable stock
- 2-3 tbsps tomato puree
- Oil for cooking
Heat oil in a large, heavy-bottomed sauce pan, add onion and cook for 2 to 3 minutes, then add celery, one diced potato and one sliced carrot and cook for a further 3 to 4 minutes.
Add stock, lentils and mixed herbs and bring to the boil, then simmer for 20 minutes. Remove from heat, allow to cool, then puree to a smooth consistency.
Dice the remaining carrots, potatoes, and turnip into even sized chunks, and add to the lentil mixture.
Bring to the boil, add tomato puree and leek, and simmer for a further 20 to 30 minutes.
